Who would ever guess there was a small urban creamery tucked in redeveloped building in the city of Cleveland?

Since 2006, husband and wife team, Jerry Onken and Mariann Janosko, have been there, making their artisan cheeses by hand.Their cheeses are sold to local chefs, at farmers markets and at small retail outlets that care for their cheeses the way they would.

Byproducts, such as whey from making the cheeses, go back to area farms to feed Hampshire hogs and pastured poultry that are destined for some of Cleveland's finest restaurants.

Types of Cheeses

FRESH CHÈVRE

Hand made fresh each week from goat milk that is gently pasteurized in small batches, this  lightly salted chèvre has a clean flavor with buttery overtones. A delight to serve fresh or use in any goat cheese recipe.

BLOMMA
Blomma is Swedish for flower, a reference to this soft-ripened cheese’s “bloomy rind.” A more assertive goat cheese — creamy and piquant when fully ripe at about six weeks. For those who prefer a milder cheese, the Blomma goes to market at three weeks, with a creamy layer surrounding a firm center.

Lake Erie Creamy's  Blomma took the Grand Prize for Dairy in the 2008 Gallo Family Vineyards Gold Medal Awards.

FETA

Greek-style cheese of raw goat milk. The wheels are mild and creamy, aged for 60 days in a lightly salted whey brine.

FROMAGE BLANC

Creamy, unsalted cheese made to order. A whole milk rather than a cream cheese, it makes a flavorful substitute for cream cheeses in dessert recipes.

CAERPHILLY

Caerphilly is a simple cheese, mild and buttery, that originated in Welsh farmhouses as lunch for Welsh and English miners.  Lake Erie Creamy's Caerphilly is made with  raw goat milk, and dipped  in wax and aged for 60 days.

The goat milk they use comes from Saanen diary goats from Cherry Lane Farms in Portage County

(Wikipedia mentions this breed of goat is known for it's calm and mild manner, often described by breeders as "living marshmellows")

Cherry Lane Farm is a working farm and because of health and safety reasons cannot accommodate on-farm visitors.

Killbuck Valley Mushrooms, Ltd. ~ Burbank,OH

7927 Overton Rd

Burbank, OH 44214

(419) 846-3258

Thomas and Wendy Wiandt of Killbuck Valley Mushrooms
have been selling their oyster mushrooms to restaurants in the Akron area since November 1999.

Their business has expanded to more mushroom varieties and more restaurants. Every week Tom makes two trips to Akron and Cleveland to deliver their gourmet mushrooms. They sell five different oyster mushroom varieties (white, blue, brown, golden and pink), and raise shiitake, Lion’s Mane, Trumpet Royale and Maitake mushrooms. Tom said shiitake mushrooms have a smoky and woodsy flavor. Lion’s Mane are sweet, rich and meaty; Trumpet Royale are among the firmest mushrooms and Maitake have a strong, nutty flavor. In summer they grow Wine caps in garden beds outdoors.

Their business fits in well with the barns on their former dairy farm. A summer kitchen was converted to a lab for the initial growing stages of the mushroom spawn. A large bank barn shelters three rooms where the mushrooms are prepared, grown and harvested.

Tom and Wendy know they are serving a niche market . The oyster mushrooms they choose to grow are more perishable than other types of mushrooms and cannot be shipped long distances by the larger producers.

In a wooded valley just outside of Wooster, Ohio, Tom and Wendy grow fungi - growths  of yellow, pink, and blue sprout from hanging plastic columns. Mushrooms should be a critical part of agriculture—they’re the recyclers.
The Wiandts produce a variety of mushrooms in just a few small buildings nestled among an old-growth forest. They have made this pursuit economically viable enough to leave their former careers, and they contend that in an ideal society, mushrooms—grown on entirely waste products—could provide an extremely efficient protein source.

Though they still hunt and market wild mushrooms from their 46-acre, organically-certified woods, they now specialize in homegrown oyster, shiitake, and lion’s mane mushrooms. These go to farmers' markets, retail outlets, and restaurants.

To reduce waste, Wendy has begun pickling the mushrooms they don’t sell. They now have a licensed cannery and sell the pickled mushrooms at market.

Ohio Ecological Food & Farm Association (OEFFA)

Founded in 1979, the Ohio Ecological Food & Farm Association (OEFFA) is a membership-based, grassroots organization, dedicated to promoting and supporting sustainable, ecological, and healthful food systems.

The OEFFA membership is very diverse. It includes farmers, consumers, gardeners, chefs, political activists, teachers, researchers, retailers, and students. What members have in common is an interest in creating and maintaining a food system that is good for people, good for the earth, and good for the future. By coming together for the annual conference, farm tours, and workshops, and attending chapter meetings, members help each other do this in their daily lives.

OEFFA provides to its members a consumer guide to organic and ecological farms and gardens, a membership directory, and a bimonthly newsletter that includes updates on OEFFA doings, regional and national news of particular interest, farm profiles, practical tips, book reviews, resources, events, opportunities, and more.

In addition, OEFFA provides organic certification services for growers, and an apprenticeship program to help students gain hands-on experience. OEFFA is also involved in research and development, farm and farmer preservation, policy making, and product promotion.
